 There is something about the maple sugaring process that takes you back in time...

When our son was young, every spring we looked forward to heading t the local nature center for their annual Maple Syrup Day! While there, we’d take a walking tour of the sugar bush, learn how to tap maple trees, when to tap the trees, how to boil to sap, and we’d get to eat pancakes with real maple syrup on them! Growing up on Aunt Jemimia made this an incredibly memorable experience! All of us loved learning about this fascinating process and deep down, God was growing in each of us a desire to make our own maple syrup one day (you can read more about how he brought the desire to pass here).  There is something about the maple sugaring process that takes you back in time to the slow and simple way of life – and its alluring. Mid-February, when days start lengthening and snow starts slowly melting, it is almost as if the air smells like running maple sap and our insides are awoken by the anticipation of the maple syrup times ahead! So many sweet memories are tied up in the tapping of the trees, hauling the sap, the late night boils and bottling sessions, the smell of the maple steams rolling off the boils pans, and of course reading all the children’s stories about maple sugaring while bundled up in the sugar shack together. Maple sugaring has become a special part of our family and as with anything that brings us joy, it is worth sharing with others! Annually, we host the Maple Syrup Pancake Breakfast at Sonshine Acres. This time allows us to share our process of maple sugaring small-scale, engage our guests in the work of hauling sap to the sugar shack, reading the children stories about maple sugaring, teach a bit about the unique opportunity we have to do this since we live in Michigan, sharing tastes of maple sugar, educate on the health benefits of this natural sugar, and reward our guests with tastes of sap boiling on the finishing tables and a tasty pancake breakfast in our corn crib gathering space.
